8 good-sized potatoes,
1 bunch green onions,
1 c. grated cheddar cheese,
salt and pepper to taste,
1/2 c. margarine or butter,
1 1/2 c. sour cream

Directions:
Directions:
Peel and boil potatoes just until tender; refrigerate until well-chilled. Hand-grate potatoes; add chopped onion and cheese, salt and pepper. Toss lightly with 2 forks, being careful not to pack potatoes together. Melt margarine and blend in sour cream. Mix into potatoes. Bake in a grease 9 x 13 pan at 350º for 45 minutes.
