Ingredients: 1 48 oz can Swanson's Low Sodium Chicken Broth 4 Chicken breasts, diced Lemon pepper seasoning 1 14 oz can diced tomato 1 can black beans (or pinto) 2-3 Carrots, diced 1/2 large onion, diced small 2-3 cloves garlic, minced 1/2 c. cilantro, chopped 1 1/2 c. corn (frozen or fresh) 12 oz. egg noodles (or other pasta) 1 1/2 tbls. cumin Lime juice (fresh or bottled - fresh tastes better) Bottled hot sauce (optional)

Directions:Add the chicken broth to a large stockpot and start heating. When it gets to a boil, turn the heat down and simmer. Add the veggies and pasta and continue simmering until the veggies are soft, but not too soft, and the pasta is done. While they are simmering, sprinkle some lemon pepper on the chicken and saute in a skillet in a little cooking oil until done, stirring often. Add the chicken to the veggie pot. Once the veggies and pasta are done, add the cumin. Next, add lime juice to taste. If desired, add some bottled hot sauce (Tapatio is my favorite). Serve and enjoy! |

Notes: You can use just about any veggies you want in this soup. You can change up the beans also. The key ingredients are the chicken broth (I find that Swanson's brand has a great flavor while others taste more like hot water), the cumin, and the lime juice. If you are in a hurry, pre-made meatballs go well with this soup rather than the chicken.
