Each of these hidden-gem cookies is topped with a bit of luscious chocolate frosting before baking. The result is chocolate-cherry perfection.

1 10-oz jar maraschino cherries (about 42)
½ c. butter, softened
1 c. sugar
¼ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
1 egg
1 ½ tsp. vanilla
½ c. unsweetened cocoa powder
1 ½ c. flour
1 c. semisweet chocolate pieces (do not substitute imitation)
½ c. sweetened condensed milk

Preheat oven to 350 degrees. Drain cherries, reserving juice. In a medium mixing bowl beat butter with an electric mixer on med. to high speed for 30 seconds. Add the sugar, baking powder, baking soda, and salt, beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in cocoa powder and flour (as much as you can with the mixer, stir in the remaining flour be hand if your mixer isn't’t strong enough).

Shape dough into 1” balls and place about 2” apart on an un-greased cookie sheet. Press your thumb into the center of each ball. Place a cherry in each center.

For frosting, in a small saucepan combine chocolate pieces and sweetened condensed milk. Cook and stir over low heat until chocolate melts. Stir in 4 tsp. of the remaining cherry juice (can add more for thinner frosting). Spoon 1 tsp. frosting over each cherry covering it completely, spreading to cover.

Bake about 10 minutes or until edges are firm. Cool on cookie sheet 1 minute. Transfer to a wire rack and let cool completely (or at least as long as you can stand to wait before eating one).
