4 cups diced apples
2 cups sugar
2 teaspoons soda
2 teaspoons vanilla
2 eggs, beaten
2 cups flour
2 teaspoons cinnamon
1 teaspoon salt
1/2 cup vegetable oil
nuts and raisins, if desired

Peel and dice apples. Stir all ingredients together and pour into a greased and floured cake pan. Bake at 350º for 1 hour.
Sprinkle with powdered sugar and serve with cool whip on top
