2tbs vegetable oil
1 tbsp garlic
1 cup shallots or onion
2 stocks lemon grass (trimmed and cut into 2" pieces)
5 slices of ginger
3 tbsp curry powder
1 1/2 lbs chicken thighs (cut into 1" pieces)
2 tbsp fish sauce
1/2 tsp salt
1 tbsp chili flakes
2 3/4 cup chicken broth
1 1/2 unsweetened coconut milk
2 1/2 cups sweet potatoes

Directions:
Directions:
Heat oil. Add garlic, shallots, lemon grass and ginger. Add curry powder when all is cooked down. Brown chicken in mixture above. Add fish sauce, sugar, salt and chili flakes. Once chicken is cooked - Add broth and bring to a boil. Reduce and simmer for 10 minutes. Add coconut milk and sweet potatoes. Simmer until potatoes are cooked. Remove lemon grass. Serve with lime wedge.
