1 box of Rice a Roni
(chicken, herb and butter or broccoli)
3 boneless skinless chicken breasts
1 can of cream of chicken soup
1 can of cream of broccoli, mushroom or celery
1 egg
1 tbsp of mayonnaise
salt and pepper
chicken stock
shredded cheddar cheese

Fresh vegetable options: broccoli, mushrooms, green beans or carrots.

Boil the chicken breasts until cooked (pull apart into pieces). Make the Rice a Roni according to the instructions on the box. Substitute chicken stock for water. Preheat oven to 350º. If you choose to have broccoli, mushrooms or carrots as your fresh vegetable you need to cook them on the stovetop in a skillet before adding them to mixture. In a large mixing bowl, mix together the Rice a Roni, cream of chicken soup, cream of your choice, 1 egg, 1 tbsp of mayonnaise, fresh vegetables, salt and pepper to taste. Spread into a casserole dish and put the cheese on top. Cook for 30 minutes or until the cheese is melted and the casserole is bubbling and browning around the edges. Cool before serving.
