5 lbs sweet potatoes
Butter for greasing pan
Grease 9 x 13 pan with butter
1/2 cup packed brown sugar
1/4 cup orange juice
1/4 cup good bourbon
1/2-3/4 tsp salt
1 tsp vanilla
1 large egg, beaten

While the sweet potatoes are boiling, mix the above ingredients together and stir well

Topping:
1/2 c flour
1/2 c packed brown sugar
1/4 cup butter, cold
1/2 c pecans, chopped

Directions:

Cut and boil the sweet potatoes. When soft, rinse in cold water and remove skins (they should slip off easily).
After draining the sweet potatoes, mash well. I like a few chunks in mine, but you can also whip them with a mixer if you like them without lumps. Stir in well the egg-sugar mixture above. Put this mixture into the greased pan.
Sprinkle topping over the sweet potatoes. If you like your potatoes sweeter, add another 1/8-1/4 cup brown sugar on top. You can also add additional pecans.
