4 slices bacon
2 T. butter
2 shallots sliced thin
Lg. head of red cabbage, thinly sliced (12 c.)
2 apples peeled and chopped 1/2 inch
3/4 to 1 c. chicken stock, or wine or cream
2 T. vinegar
1/4 t. allspice
1-2 bay leaves
1/4 c. brown sugar
1 T. Dijon
Salt and pepper

Directions:
In Dutch oven, cook bacon, Remove bacon and crumble.
Add butter to pan, saute shallots for few min, then add apples and cook until softened. Add seasoning (like BVI) for another min, then add cabbage until slightly wilted.
Add other ingredients (except cream if adding that) and cook over low heat for 30-40 min, stirring several times.
Taste for seasoning, can add more vinegar or lemon juice if needed, and cream if adding.
Keep warm
Can be made ahead and gently reheated.
