3 pounds of boneless pork shoulder
3 cups chicken stock
1 onion, sliced
1 clove garlic
1/2 tsp. oregano
salt
1 chicken
1 tbsp bacon fat [or butter or chicken fat]
2 onions chopped
2 cloves garlic minced
1-2 tbsp chili powder
2 larger cans[1 lb. 13 oz] hominy, drained
1 cup tomatoes, chopped
1 4 oz can green chilies, chopped
1/4 cup fresh coriander, minced

Directions:
The best way to make Posole is to start the day before. Put pork in a big pot with stock and enough water to cover. Add onion, garlic, oregano and a little salt. Simmer uncovered 45 minutes, then add chicken and simmer 30 minutes more. Strain stock and refrigerate. Wrap the meats and also refrigerate. Next day, lift fat off the stock, cut meaty parts of the pork and chicken into 1/2 inch cubes. In the same big pot, saute onion and garlic in fat until soft. Add pork and chili powder and cook several minutes, stirring. Pour in the stock--there should be about 8 cups. Add hominy, tomatoes, chilies, and coriander. Simmer 20 minutes. Finally add chicken and simmer another 15 minutes. Serve in bowls.

I think Jerry cooked the pork longer than the recipe says. This makes a very large amount, but it freezes well.
