4 cups grated zucchini (2-3 medium zucchinis)
1/2 tsp. salt
1 cup water
1 cup mayonnaise
2 tsp. sugar
2 eggs, whisked
1 onion, chopped

Topping:
1/2 - 3/4 roll Ritz cracker crumbs- smash in baggie
3 T. melted butter

Directions:
Directions:
Boil zucchini and salt in one cup of water for 5 minutes. Drain and squeeze out extra water to dry. In separate bowl mix mayo, sugar, eggs, and onion then mix in zucchini. Put into a greased 1 1/2 quart casserole dish.

Add topping:
Melt butter and stir with crumbs then sprinkle on top of casserole.

Bake at 350º for 45 minutes.
