4 cups un-sifted all purpose flour
1 egg
2 cups quick or old fashioned oats
1 tsp. vanilla
2 tsp. baking soda
1 can (16 oz) Libby’s solid pack pumpkin
2 tsp. cinnamon
1 tsp. salt
1 c. granulated sugar
1 ½ c. butter or margarine (softened)
2 c. firmly packed brown sugar
1 c. real semi-sweet morsels

(optional)
assorted icings or peanut butter
assorted candies, raisins, or nuts
(Carol prefers caramel icing)

Directions:
Preheat oven to 350 degrees.

Combine flour, oats, soda, cinnamon, and salt; set aside.

Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels.

Bake at 350 degrees until cookies are firm and slightly browned. Remove from cookie sheets; cool on racks.

Decorate, using caramel icing. Variations: substitute 1 cup raisins for morsels. Dough can be frozen in an airtight container. Thaw in refrigerator, bake as directed.
