1 small onion, diced
½ pound zucchini, chopped
½ teaspoon butter
3 tablespoons all-purpose flour
Dash salt and pepper
½ teaspoon basil
3 eggs
1 pound Ricotta
½ cup grated Cheddar cheese
Dash nutmeg

Directions:
Directions:
Sauté the onion and zucchini in butter, stir in flour, and add salt, pepper, and basil. Remove from heat, add the remaining ingredients and mix well. Bake in a 1 ½ quart casserole dish in a 375º oven for 40 to 45 minutes.
