1 cup of canned diced tomatoes
6 slices of bacon, roughly cut into 1/2" pieces
2 ribs of celery, finely chopped
1 lb. fresh mushrooms, sliced
1 cup grated cheddar cheese
1 pkg. Lipton's onion soup mix
1 1/2 cups instant rice

Directions:
Directions:
Drain tomatoes, but reserve juice. Add enough water to the tomato juice until it equals 1 1/2 cups. Fry bacon until crisp, reserve 2 tbsp. of drippings. Saute mushrooms and celery in bacon drippings until tender. Stir in 3/4 cup of cheese, tomato/water mixture, and all remaining ingredients except cheese. Pour into a greased baking dish. Top with remaining cheese. Bake, covered at 375º for 20 minutes.
