Figs (washed and cleaned figs with stems removed)
Sugar

For 1 gallon figs use 5 lbs. sugar
These are whole figs (uncooked) when measuring out the gallon.

Add sugar to figs and let sit overnight. Cook on Low for a long time. Stir alot. Don't cook too long because it will crystallize and turn to sugar. After cooking figs down, pour into jars. Seal jars as directed for canning and put into boiler. Boil for 10 minutes. Put towel in bottom of boiler to keep jars from being on bottom.
