2 lbs ground beef
1 onion, diced
grated jack cheese
grated cheddar cheese
2 cans sliced olives
1 large can enchilada sauce
Corn tortillas

Directions:
Directions:
Brown ground beef and onions. Drain off fat and season with your favorite Mexican seasonings then pour meat into a bowl and stir in olives and cheeses.
Pour enchilada sauce into a skillet and heat over low heat.
Spray a baking dish with cooking spray and place near the skillet of sauce.
Put a tortilla into the sauce and cover completely. Transfer tortilla to baking dish and spoon meat/cheese mixture in and roll. repeat with remaining tortillas and filling moving the filled tortillas tightly together until pan is full. Cover with remaining sauce and more shredded cheese and bake at 350until heated through 15-20 minutes.º
