2 tablespoons olive oil
2 cups diced ham
1 medium onion, chopped
1 medium bell pepper, chopped
6 eggs
Non-stick cooking spray

Seasoning ideas:
Garlic powder
Onion powder
Your favorite salsa
Salt
Pepper

Directions:
Directions:
Heat olive oil to medium heat. Saute ham, onions, bell pepper. Add your favorite seasonings to the ham mixture. Might I suggest: 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, 1/2 teaspoon pepper.

Brown ham mixture for approximately 5 minutes. Spray a pie dish with non-stick cooking spray. Pour ham mixture into pie dish. Scramble eggs in a bowl and pour over ham mixture. Slightly stir eggs so ham mixture is evenly distributed.

Bake at 350 degrees for approximately 30 minutes or until eggs are fully cooked.

Seasoning the ham mixture is imperative in this dish because it provides alot of favor, which is a helpful substitute for cheese which typically overwhelms most egg dishes.

You can tell the eggs are done because the center of the quiche is firm and not jiggly to the touch.

Serve with fresh seasonal fruit and coffee.
