1 tsp. minced garlic
1 T. butter or margarine
1 c. finely chopped onion
1 c. finely chopped bell pepper, optional
3 (14.5 oz.) cans diced tomatoes with liquid
1 small can sliced ripe black olives, drained
1-2 T. dried oregano
1 lb. ground beef, browned and drained
12 oz. pkg. thin spaghetti, cooked and drained
2 cups grated Cheddar cheese or mozzarella cheese
1 can cream of mushroom soup
1/4 c. water
1/4 c. grated Parmesan cheese

Preheat oven to 350º and grease a 9x13x2 in baking dish. In large skillet, saute the garlic, onion and bell pepper (if desired) in the tablespoon of butter until tender. Add the tomatoes, olives, oregano and the cooked beef. Simmer, uncovered, for about 10 minutes. Place half of the spaghetti into the prepared dish. Top with half of the meat mixture, and 1 cup of the cheese. Repeat the layers. Mix the canned soup with water until smooth, and pour over the casserole. Sprinkle the top with Parmesan cheese and bake, uncovered, for 30-35 minutes.
