3 egg whites
20 Ritz crackers, crushed to a fine crumb
1 cup sugar
1 tsp. vanilla
1/2 baking powder
1 cup chopped pecans

Directions:
Directions:
While beating the egg whites with a hand mixer, add sugar and baking powder. Beat to a stiff meringue. Add crushed Ritz crackers, nuts, and vanilla. Pour into a well greased pie pan. Bake at 350º for 20 minutes. Cool at least 3 hours before serving. Top with whipped cream.
