8 hard-cooked eggs
1/2 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 -1/2 teaspoon curry powder
1/4 teaspoon dry mustard
3 tablespoons butter, divided
2 tablespoons flour
1 (10 3/4 ounce) can condensed cream of shrimp soup
1 soup can milk
1 (6 ounce) can shrimp, drained
1/2 cup shredded sharp Cheddar cheese
1 cup soft bread crumbs

Preheat oven to 350º.

Cut eggs in half lengthwise. Remove yolks and mash with mayonnaise, salt, paprika, curry powder, and dry mustard. Fill egg whites with yolk mixture; arrange eggs in 8-inch baking dish.

In saucepan, melt 2 tablespoons butter; stir in flour. Add soup, milk and shrimp; cook until thick and bubbly. Stir in cheese. Remove from heat and pour over eggs.

Melt remaining butter and mix with bread crumbs. Sprinkle over the top of eggs or just around the edges of the dish. Bake 15 to 20 minutes. Serves 4-6.

This is a great brunch or luncheon dish. I like to have it ready to pop in the oven as soon as we get home from church.
