12 slices Canadian Bacon
1 T sweet butter
8 slices Swiss cheese
12 eggs
3/4 C light cream
salt and pepper to taste
2 T Parmesan cheese
2 T fresh parsley, chopped

Directions:
Directions:
Saute bacon in butter, 1 minute on each side.
Drain.
Fit Bacon slices around the rim of a 10" pie pan to form a scalloped edge.
Place cheese slices in bottom of the pan, slightly overlapping the bacon.
Break each egg into a small dish and carefully place onto cheese.
Cover with cream.
Season with salt and pepper.
Sprinkle grated cheese on top.
Bake for 20-30 minutes at 350º until eggs are set and top is lightly browned.
Sprinkle with parsley.
