1 Tbsp oil
1 large onion, chopped
5 carrots, thinly sliced
4 medium red potatoes, cubed (peeling optional)
2 celery ribs, thinly sliced
1 can ( 14.5 oz) diced tomatoes
1 cup lentils, rinsed and sorted
3 (14 oz) cans chicken broth
2 cups water
1/2 tsp salt
1 1/2 cups diced, cooked smoked kielbasa (I like to use turkey kielbasa)

Directions:
Heat oil in large pot, Add onion. Cook about 15 min over medium-low until onions are very tender and begin to turn golden brown; stirring occasionally. Add remaining ingredients. Bring to a boil, cover. Reduce heat and simmer about 30 minutes. Add kielbasa; simmer 10 more minutes or until vegetables are tender.
