4 tablespoons extra virgin olive oil
4 Chicken breast halves
1 cup Feta Cheese crumbled
˝ cup chopped red onion
1 egg
1/2 cup fresh, chopped cilantro
Sea salt/fresh ground pepper
1 can/cup diced tomatoes drained
˝ cup cheddar or Monterey jack cheese grated
˝ cup canned or fresh roasted green chili’s (medium heat)
1 can Stokes green chili chicken sauce

Directions:
Directions:
Preheat oven to 375 degrees
Mix together chopped cilantro, salt, pepper (to taste), egg and feta cheese in small bowl.
Butterfly chicken breast halves evenly. Place onion and chicken into skillet with olive oil to lightly brown on both sides.
Pour 1/3 of the green chili chicken sauce into oven bake ware and arrange browned chicken halves open, on top of layer of sauce. Reserve onions. Place feta mixture inside of one half of each chicken breast Add onion evenly. Close breast and secure with a toothpick if needed.
Pour tomatoes (drained completely), green chilies and remaining green chili chicken sauce over chicken.
Place in oven for 20 minutes. Add grated cheese and cook for 10 additional minutes.
Remove from oven and serve with your favorite sides.

Originally this recipe was an attempt to copy a favorite menu item that had disappeared from the menu at Randy’s restaurant in Durango, Colorado. Over time it incorporated an ingredient from a chicken dish, served by a very dear friend and my adopted mother, Karen. With my own modifications and a little help from my friends I managed to make a dish that everyone seems to want over and over. My friends use it to serve first time guests because it always gets rave reviews. I used it as a staple in our home in Durango, while raising three children with full time careers.
I just made this for my husband last night to make sure it could be done in 45 minutes. I made it just in the nick of time and he said it was the best ever!
