Amounts should be adjusted by your number of people
Extra virgin olive oil (EVOO)
Fresh green beans
Fresh Mushrooms
Yellow/red or white onions
Fresh garlic (3 tablespoons chopped)
1 can of cream of mushroom soup
1 small can of French fried onions
Sliced almonds

Directions:
Clean and blanch or steam green beans for 10 minutes. Sauté onions and garlic in EVOO. Add mushrooms when onions are almost translucent and cook part of the way. Stir in cream of mushroom soup. Add ¼ cup of milk or water and stir until everything is evenly distributed. Spray casserole dish with light coating of EVOO and add beans and sautéed vegetables then stir in ½ of the French fried onions and ½ of the almonds. Add pepper to your taste. Spread remaining French fried onions and almonds on top and bake at 350 covered for 20 minutes and uncovered for an additional 15 minutes. It should not be dried out or too soupy….Do not let the cream of mushroom soup take over. You will not need any salt and may even want to use low sodium soup
