3 stalks celery, chopped
3 large onions, chopped
2 large green peppers, chopped
bacon drippings or fry out 5-6 slices of bacon, chopped

1- 2 cans diced tomatoes
1 t dried thyme
1 T sugar
salt and pepper
1 pound fully cooked smoked sausage, cut to serving size pieces
1-6 datil peppers

3 cups long grain rice

Directions:
Directions:
Saute' bacon until brown and fat is rendered, remove bacon. Saute' onions, celery, and green peppers until tender and browning. Add tomatoes, thyme and sugar continue to brown. Add tomatoes and sausage in cooked rice. Stir together then put the datil peppers on top. Place lid on and turn to low. Cook for 10-15 minutes. Serve with more hot sauce.
