½ c vegetable oil
6 chicken breast halves, boned, skinned and cut in 1 ½ inch pieces
1 large onion
2 cloves garlic, minced
1 cup chicken broth
2 tbsp cornstarch
2 14 oz cans stewed tomatoes
2 medium green peppers, cut into 3/4 inch pieces
½ cup Picante sauce
1 tsp ground cumin
1 tsp oregano
1 tsp salt (if needed)

Directions:
Heat 2 T oil in 13' skillet until hot but not smoking. Add chicken and cook, stirring constantly, until browned and cooked through. Remove and set aside. Add remaining oil, onion, and garlic. Cook stirring constantly until onion is tender, but not brown. Dissolve cornstarch in small amount of chicken broth and set aside. Add chicken, tomatoes, cumin, oregano, picante sauce, salt, chicken broth, green peppers and corn starch mixture. Cook over medium heat stirring occasionally until peppers are crisp-tender and mixture thickens 8-10 minutes. Serve with additional picante sauce and hot sauce if needed.

***The basic recipe is also great with shrimp. Add them at the last with the green peppers and cook until done.
