4 large potatoes
1 tbsp. extra-virgin olive oil
2 tbsp. butter
4 closes garlic, chopped
4 scallions, chopped
1 cup ricotta cheese
1/2 cup mild
1 cup shredded or grated Parmesan, Parmigianino-Reggiano or Romano cheese

Directions:
Peel potatoes and cut them into small chunks. Place potatoes in a pot and cover with cold salted water. Bring potatoes up to a boil over high heat. Cook until tender. Approx.. 15 minutes. While potatoes are cooking, in a small pan over medium heat add vegetable oil and butter. When butter melts into the oil, add chopped garlic. Saute' garlic 1 to 2 minutes, then add scallions and remove pan from heat and reserve. Now that the potatoes are done, drain then return to hot pot. Add the reserved garlic and scallion mixture to the potatoes along with the ricotta, mild and grated cheese. Smash with a hand masher until all is combined. Season your Delicious Smashed Potatoes with salt and pepper as desired.
