1 medium eggplant
1/4 cup melted butter
3/4 cup cracker crumbs
1 small onion, chopped
1 can cream of mushroom soup
2 eggs, well beaten

Directions:
Directions:
Preheat oven to 350º
Peel, dice & cook eggplant in boiling salted water until tender, drain and mash.
Add all other ingredients, mix thoroughly
Pour mixture into greased baking dish, bake at 350º for 40-60 minutes. Done when toothpick inserted in center comes out clean.
