2 tablespoons olive oil
3 boneless skinless chicken breasts, diced
3 stalks celery, chopped
1 large carrot, chopped
1/2 large onion, chopped
1/2 cup butter
1/2 cup Frank's Red Hot Sauce
2 tablespoons white vinegar
1/2 (8 ounce) package cream cheese, softened
1/2 cup Ranch salad dressing
1 large tomato, chopped
1 cup shredded Cheddar cheese
1/2 (32 ounce) bag frozen tater tots

Directions:

Preheat oven to 350º.

In large skillet, heat olive oil over medium heat. Cook chicken, stirring frequently, about 7 minutes. Add celery, carrot and onion. Continue to cook until chicken is done. Transfer chicken mixture to large bowl.

In medium saucepan, melt butter over low heat. Whisk in hot sauce and vinegar. (If you like you can add your favorite secret ingredients to taste: 1 tablespoon honey, paprika, Worcestershire sauce, ketchup, few dashes Tabasco, 1-2 teaspoons black pepper or 2 cloves garlic, minced)

In small mixer bowl, beat cream cheese; add Ranch dressing and mix on high until thoroughly mixed. Add hot sauce mixture and beat well. Stir into chicken mixture. Stir in chopped tomato.

Pour mixture into large casserole. Sprinkle cheese over top of the hotdish; top with tater tots. Bake 45 minutes.
