2 firm, ripe avocados, sliced and diced
6 roma tomatoes, chopped
2 tsp. fresh lime juice
1 can black beans (rinsed and drained)
1 can corn (rinsed and drained)
1 can black-eyed peas (rinsed and drained)
2/3 c. cilantro, chopped
2/3 c. green onion
1 can green chilies, diced
1 packet of dry Italian dressing mix, prepare as directed on package

Directions:

Toss diced avocados in bowl with lime juice. Add all other ingredients. Serve as salsa or on tacos.

I use to do this with a different sauce, but Tammy had made a similar salsa with the Italian dressing and I loved it so make mine this way now. We make this whenever avocados are a good price.
