8 cups diced potatoes
4 T chopped pimiento
4 T chopped onion
6 T butter
6 T all-purpose flour
1 ½ tsp salt
½ tsp pepper
6 cups milk

Directions:
Directions:
Prepare potatoes & onions: Peel potatoes and cut into small cubes. Chop onion. Cook potatoes and onion together in boiling water until potatoes are cooked through. Drain.

Prepare white sauce: Melt butter in saucepan over low heat. Blend in flour, salt, and pepper. Add milk all at once. Cook quickly, stirring constantly, until mixture thickens and bubbles.

Remove sauce from heat. Add pimiento and cooked potatoes/onions. Heat through. (Add more milk to desired consistency if needed.
