Ingredients: 1 loaf white bread dried out 1 small pan of cornbread (I use 1 package of Pepperidge Farm Cornbread Dressing) 1 large package of Pepperidge Farm Herb Dressing (I use 2 packages of PF Herb Dressing) 1T poultry seasoning 1/4c Worchestershire Sauce salt pepper 1 1/2 tsp sugar 1 egg 3 med onions - cut fine (I use 3 or 4 Large Onions) 8 or 10 celery sticks cut fine (I cut up a entire stalk - but not fine) 1T sage 1gal milk

Directions:It was difficult to get this recipe because MeMe would just say a pinch of this a dash of that. I've increased the ingredients because we all can't get enough of it.
Cook onions and celery in beacon grease (I cook a package of beacon and cook them in the grease).
Kneed dried bread into small pieces and dampen down with milk (It takes about 1/2 a gallon of milk to soak all the bread/cornbread & herb dressing)
Add cooked onions and celery to bread mixture and mix together. Next add all the seasoning. I always have to add more poultry, sage & Worchestershire Sauce. Sometimes I put in 2 eggs. If you add more seasoning you will probably need to add more sugar.
Test flavor by frying some in the pan you cooked the onion and celery. Modify with seasoning if needed.
Stuff Turkey. I always have enough leftover to put in a pan and cook separately. Be sure to butter the pan first and butter the top of the stuffing. |
