1 med. eggplant
1 sleeve of saltine crackers (crushed up)
1/2 c. of finely chopped green pepper
1/2 c. finely chopped onion
1/2 c. shredded cheddar cheese
1 egg

Directions:
Directions:
Peel eggplant and cut into cubes. Boil until almost transparent. Drain and squeeze out excess moisture. Mash slightly and combine remaining ingredients. Shape into patties. Fry in hot oil turning only once until golden brown. Serve hot.
