1 pound salmon fillets (Can purchase a bag of 4 filets at Walmart)
salt and pepper to taste
1 cup spicy Bloody Mary mix (we prefer the Bold and Spicy version for taste - No V8 is not a substitute.)

Directions:
Directions:
1.Place salmon fillets in a medium baking dish, and season with salt and pepper. Pour spicy bloody mary mix over the fillets. Cover, and refrigerate at least 30 minutes - max 1 hour or so. (don't too long or else they will be hardened).
2.Preheat the broiler.
3.Broil approximately 17-20 minutes, until fish is easily flaked with a fork and surface is lightly browned.

Matt and I LOVE this. It started out he wanted to show me how good he could cook. Little did I know how easy this one would be. This is our 'fancy/easy' dish. We take the fish out of the sauce and will put over a wild long-grain rice and it is perfection!
