- 1/2 Cup of Butter
- 1/2 Cup of firmly packed Brown Sugar
- 3/4 Cup granulated Sugar
- 1 Egg
- 1 tsp. of Vanilla
- 2 tsp. of Grated Orange Peel (I use the entire orange peel though to add a stronger flavor of orange).
- 1 3/4 Cup Flour
- 2 tsp. Baking Powder
- 1 tsp. Salt (optional - I do not use)
- 1/3 Cups flaked Coconut (optional, I don't always use).

Directions:

Cream: ½ cup butter & ½ cup firmly packed light brown sugar & ¾ cup granulated sugar.

Beat in: 1 egg, 1 tsp. vanilla, 2 tsp. grated orange peel

Combine in separate bowl: 1 ¾ cup flour, 2 tsp baking powder, 1 tsp salt. Mix together.



Gradually add dry ingredients to creamed mixture.

Blend in: 1/3 cup flaked coconut. (optional - I don't always use this)

On slightly floured surface form into rolls 1 ½ inches diameter.

Refrigerate several hours or overnight. (I usually do so overnight)

Bake at 400ºF on buttered cookie sheets for 5-6 minutes. Cut the cookies very finely to make a thin, crisp cookie when baked.
