4 Tomatoes
1 Cucumber
1 Pepper yellow or orange
1 Sweet Vidalia or red onions
1/2 cup Olives
1/3 cup Capers
1 tbsp Greek seasoning
1 tbsp rice or red wine vinegar/lemon juice
1/4 cup of olive or grapeseed oil
parsley or cilantro (for good eyesight)

Directions:
Directions:
In a large bowl combine cubes of cucumber, tomatoes, pepper and onion.
Drain and rinse (if necessary) olives and capers.
In a small bowl combine oil and vinegar.
Greek seasoning and salt & pepper if required.
Combine with washed and dried leaves of flat leaf parsley or cilantro, adding before serving.
