2 Tbsp. and 3 C. oil
1 lb. ground beef
1/2 C. chopped onion
1 Tbsp. salt
1/2 C. chopped bell pepper
1 potato, baked and peeled
1 tomato, chopped
1 tsp. black pepper
1/2 tsp. garlic powder
1/2 tsp. ground cumin
1 Tbsp. paprika
1 Tbsp. chili powder
3 Tbsp. flour
24 corn tortillas

Directions:
Heat 2 tsp. oil in large skillet on medium-high heat, brown ground beef. Add onions, salt and bell pepper until soft. Mash potato, tomato and spices in a bowl until smooth. Add mixture from bowl to skillet, cook until warmed through. Add flour and stir until thickened.

Heat 3 C. oil in skillet on high to 350º. Put a heaping Tbsp. of filling onto the middle of each tortilla, fold and place on one side into the skillet. Once browned (about 2 minutes) use tongs to flip onto the other side. Once the second side is browned, place on paper toweled plate to serve. Add your favorite taco toppings and enjoy! (Makes 24 tacos)
