3 cups of sifted cake flour or 2 1/2 of gold medal
4 teaspoons of baking powder
16 cherries, chopped (drain and reserve liquid)
2/3 cup of milk
6 egg whites
1 3/4 cups of sugar
1 teaspoon of salt
1/3 cup of cherry juice
2/3 cup of shortening
1/2 cup of chopped nuts

Directions:
Directions:
Sift flour in a large mixing bowl. Add all other dry ingredients, sugar, baking powder, salt.

Add cherry juice, milk and shortening. Blend and beat for 2 minutes with electric mixer. Add the cherries and the nuts. Blend in by hand.

Fold in, by hand, 6 egg whites beaten stiff.

Pour into two round 9 inch pans, greased. Bake at 350º for 25 to 30 minutes.
