"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Cut chocolate and melt over slow fire (don't burn).
When chocolate is melted take from fire and add sugar, karo, and cream - stir lightly.
Put back on medium fire after it comes to good boil lower fire and stir slowly.
When syrup begins to thicken (test by dropping a drop or two in a cup of cold water (not ice water) when drop seems to stay together and doesn't spread) remove from fire.
Add vanilla and oleo, beat good, it will take quite a while, just before taking it up at nuts.

From MeMe:
Sometimes I will beat to long and candy will begin to harden as I pour and other times it will take longer to happen. Be sure your ball of syrup stays together or your candy will not harden. After you make it a time or two you can judge how it looks while beating syrup. I have better luck by making 1 batch at a time. My pan is 9 by 9.
