5 eggs
1/2 tsp. cream of tartar
1/4 C. sifted flour
3 T. cocoa
1tsp. vanilla

Filling:
1 1/2 pints whipping cream
1 tsp. vanilla
Powder sugar to taste

Directions:
Directions:
Preheat oven to 325º.
Sift together cocoa and flour, set aside.
Grease jelly roll pan and line with wax paper.
Separate eggs, beat egg whites with cream of tartar, add 1/2 of the sugar. Beat until mixture peaks.
Beat yolks with vanilla until lemon yellow add other 1/2 of sugar.
Fold egg yolks into egg whites.
Fold flour into egg mixtures.
Pour batter into jelly roll pan.
Bake for 25 mins.
Cool for 5 mins.
Turn onto a towel dusted with powdered sugar.
Let roll cool.

Whip whipping cream,vanilla and sugar until stiff.
Spread on cake.
Carefully roll cake into log.

Ice with chocolate icing.
Use fork to create bark out of the icing.

Logs may be frozen. Freeze logs on cookie sheet. When well frozen wrap with plastic wrap and tin foil and return to freezer.
