1 lb. Jimmy Dean Hot cooked sausage. I use the cooked sausage sprinkles when I can find them.
1 20 oz. bag of "Simply Potatoes: (shredded hashbrowns, or you can shred your own fresh white potatoes
1/4 c. melted butter
12 oz. shredded cheddar cheese
1 - 16 oz. small curd cottage cheese ( not non-fat)
9 -12 large beaten eggs
1 chopped medium onion

Directions:

Preheat oven to 350.º Spray a 9 X 13 pan with Pam.

Put potatoes into pan and pour the melted butter over them. Mix well and lightly flatten in the pan.

Combine sausage, cheddar cheese, cottage cheese, onion and beaten eggs. Pour over the potatoes.

Do not cover the pan when baking.

Bakes in about 1 hour. It is done when knife blade inserted in center comes out clean.

This is very nice when served with a fruit salad and maybe some kind of biscuits, toast, English muffins, or a good coffee cake. Also very good when topped with salsa or pico.
