1 c. raisins
1/2 c. chopped pitted dates
4 c. all-purpose flour
2 c. sugar
1 T. plus 1 tsp.baking soda
1 T. plus 1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. salt
4 c. grates peeled carrots
2 large green apples, peeled and grated
1 c. sliced almonds
1 c. sweetened shredded coconut
6 large eggs
1 1/3 c. vegetable oil
1 T. plus 1 tsp. vanilla
1 T. freshly grated orange rind

In a small bowl, cover raisins and dates with hot water and soak 30 minutes. Into a large bowl, sift together flour, sugar, baking soda, cinnamon, nutmeg and salt.

Drain the raisins and dates thoroughly and stir them into the flour mixture with the carrots, apples, almonds and coconut.

In a bowl, whisk together eggs, oil, vanilla, and orange rind. Stir the mixture into the flour mixture until batter is just combined. Line muffin tins with paper muffin cups filling them two-thirds full.

Bake in the middle of a preheated 350º oven 20-25 minutes or until a tester comes out clean. Turn them out onto racks: serve at room temperature. Makes at least 30.

These take lots of grating, chopping prep work but the actual mixing goes fast. The muffins are worth it. After they are cooked, I usually keep out half the batch and freeze the other half. They freeze beautifully.
