2 cups sugar
1/2 cup brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
3 cups flour
2 cups pecans
1 pkg. dates diced
3 cups diced apples diced, peel on
2 tsp. vanilla
3 eggs
1 1/2 cup butter flavored oil

Directions:

Sift together dry ingredients. In a seperate bowl, mix sugars, eggs, oil and vanilla. Combine both and mix REAL good 'til batter forms.
Add pecans, dates and apples & mix by hand so as not to mash fruit too much.

Prepare bundt pan with oil and flour to keep from sticking. Pour batter into pan and cook in 350º
preheated oven for 65 minutes. Poke with a toothpick to see if done. If still doughy, cook a few minutes longer.

This is a really great cake for the holidays. Keeps good, moist and not too fruity. Nobody knew BR could cook ANYTHING until she came up with this. Since it was edible, she decided to give a cake to everyone in Artesia and the whole Williams clan for Christmas that year. Course, she did not have as much enthusiasm about the recipe when her girlfriend explained what kind of "date" the recipe was actually calling for !
