4 eggs
2 C flour
1 C light cream
1 C milk
1 tsp salt

Directions:

In a blender, mix all ingredients well.
Cover and refrigerate at least 2 hours.

1/2 hour before serving, spoon 8 T of fat drippings from roast that you are cooking into a shallow baking pan.
Set in oven to become sizzling hot.
Stir chilled batter and pour onto hot pan about 1/2" deep.
Bake at 425-450º for 15 minutes.
Reduce heat to 350º and bake 10-15" longer, or until pudding is light, crisp and brown.

Serve with gravy.
