2 T butter
2 T flour
1 C milk
1 tsp salt
1/8 tsp pepper
2 16 oz cans of cream style corn
3 eggs, slightly beaten

Optional:
1/4 C chopped green pepper
1/8 C grated onion

Directions:
Directions:
Preheat oven to 325º.

Make white sauce:
Melt butter over medium heat.
Stir in flour until a thick and well mixed.
Slowly add milk, stirring all the time.
Add salt and pepper.
Heat (do not boil), stirring all the time until slightly thickened.

Add corn and eggs to white sauce, mix well.
Place in a casserole dish.
Sprinkle crumbled Ritz crackers on top.

Place casserole dish in a larger pan with water in the bottom.
Bake for 1-1 1/2 hours until knife inserted in the center comes out clean.
