1/4 c. extra virgin olive oil
2 large onions
2 tbsp. garlic, minced
2 lb. okra
2 large eggplant
2 large zucchini
6-8 peppers, chopped
6-9 peeled, seeded and chopped tomatoes
1/4 c. fresh thyme, chopped finely
1/4 c. fresh basil, chopped finely
1/4 c. fresh oregano, chopped finely
2 cans tomato sauce
salt and pepper to taste

Heat olive oil in a skillet. Saute onions and garlic until golden brown. Add all firm vegtables and cook until tender. Add fresh herbs. Add all remaining ingredients and cook until juices thicken. Serve over pasta, fish, chicken or any other favorite food. Top with fresh parmesan cheese. Freeze leftovers.
