3 tbsp. all-purpose flour
1 tsp. salt divided
1/4 tsp. paprika
1-1/2 c. milk
1 can (10 oz) enchilada sauce
1 c. shredded cheddar cheese
1 can 2-1/4 oz. sliced ripe olives, drained
3/4 lb. ground beef
1 medium onion, chopped
1 can (9 oz.) bean dip
1 can (10 0z.) diced tomatoes & green chilies drained
1/8 tsp. pepper
9 ( 6 inch) flour or corn tortillas warmed.

Combine flour, 1/2 tsp. salt, paprika, milk and enchilada sauce until smooth. Microwave uncovered, on high, 2 minutes; stir. Cook 4-5 minutes longer or until thickened stirring every minute. Brown beef and onion till meat is no longer pink; drain. Stir in bean dip, tomatoes and chilies, pepper and remaining salt. Spoon about 1/3 cup meat mixture down the center of each tortilla; roll up tightly. Place enchiladas seam side down in an ungreased, oven safe dish.Ttop with sauce, cheese and olives bake at 400º F until the cheese is melted and bubbly.
If you'd like; Serve with sour cream, Hot peppers and/or Aunt Bonnie and Uncle Fred's avocados.
