2 Cups Pumpkin
1 Cup Sugar
1/4 Tsp. Salt
3 Egg Yolks
1/2 Stick butter (melted)
1 Cup whole milk
2 tsp nutmeg

Directions:
Directions:
Preheat oven to 400º.

Combine pumpkin with sugar, salt, milk and well beaten egg yolks. Add melted butter and mix well. Add nutmeg and mix. Pour into unbaked pie crust. Bake for 5 minutes at 400º to set the crust. Reduce the heat to 375º and bake until pie filling is firm and set.

Beat egg whites until stiff using 3 TBSP sugar to each egg to sweeten. Spread meringue on pie and bake for 15 minutes until meringue begins to brown.

Grandmama always said if you're using fresh pumpkin to reduce the milk by 1/2 cup.
