8 pieces of Chicken Breast cooked with celery, *save essence - to be used to complete the recipe.

Shred or pull apart chicken, season shredded chicken with salt/pepper, chop or shred approx 3 - 4 c. white bread crumbs into small pieces, mix bread crumbs in with the chicken, add chicken essence as needed (2 -3 c.) make a moist mixture, squeeze with hands so that it sticks together (chicken, bread crumbs & essence). Place in a 9 x 13 pan, place wax paper on top of mixture and "press" (like ironing - repeat 3 or 4 times with new piece of wax paper each time), this will enable you to cut and serve neatly. Refrigerate several hours before serving.
