1/2 C canola oil
6 C rolled oats (not quick or instant)
2 C mixed nuts and seeds (sunflower, sesame, walnuts, pecans, almonds & cashews)
1 C dried unsweetened shredded coconut, optional
1 tsp ground cinnamon
dash salt
1/2 C honey
1/2 C maple syrup

1 C raisins and other chopped dried fruit.

Directions:
In large bowl combine all ingredients except raisins/dried fruit. Place on a large baking sheet and bake for 30 minutes, stirring occasionally. Mixture should brown evenly, the browner it gets without burning the crunchier it will be. Remove pan from the oven and add raisins/dried fruit. Cool on rack, stirring once in awhile until granola reaches room temperature. Transfer to sealed container and store in refrigerator.
