1 can (14 1/2 oz) diced tomatoes - I often use 2 large fresh tomatoes, chopped up and simmer in saucepan for 10 minutes
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1 cup chopped celery
2 tbsp. butter or oleo
1 tsp. sugar
1 tsp. salt
1/2 tsp. pepper
3 tbs.p flour
1 tsp. Creole seasoning
1 1/2 - 2 lbs. fresh shrimp

Directions:
Directions:
In 2 - 2 1/2 qt. casserole melt butter for 1 1/2 minutes. Stir in vegetables. Microwave cook 4 minutes stirring once. Sprinkle with flour and stir well. Add tomatoes and cook 3 minutes. Stir and cook 3 additional minutes. Add sugar and seasonings and blend. Add shrimp and cook for 6 minutes stirring at 2 minute intervals. Serve over rice. Serves 5 or 6 people.
